Catching up on recipes: 4 that worked for me

My recent cooking has not been a total disaster. Not everything I make is under- or over-seasoned. Here are four recipes that worked ... mostly. It's all relative.


1. Bacon-wrapped chicken breast. Because really, everything is better wrapped in bacon. Even the bananas I had at a fancy restaurant once. This particular bacon was left over from a pack of fresh bacon I bought from the meat counter, and we wrapped some chicken with it. Thick, juicy bacon. Yum.


2. Mango salsa
. I can't even remember what I used this on. Probably chicken. But it was delicious. This is from the below recipe my aunt shared with me.

2 mangoes ripe cubed (I like a small dice)
1 jalapeno pepper,minced.(seed and de-vein to keep mild or leave some in for heat)
2 Tbsp red bell pepper, diced
1 Tbsp fresh lime juice
1 Tbsp olive oil
Pinch of kosher salt and fresh ground pepper.
Mix all ingredients and chill. Then bring to room temp to serve.
This is great with chips (natch), fish, shrimp, chicken....
(I usually use more bell pepper and lime.....)



3. Strawberry muffins, er, cake. One of those unplanned moments a la Lindsay when I mixed up a batch of fresh strawberry muffin dough with fresh strawberries, and alas, realized I had packed away my muffin pans. Being too lazy to go buy the disposable kind or even a new pan, I threw the batter into a cake pan and baked. It was delicious. I can't for the life of me remember which recipe I used out of the thousand that are out there online. It was a very simple recipe; that's all I do remember. 
I added buttercream frosting because it looked like a cake (and again, what doesn't taste good with a little buttercream frosting) but it was a tad sweet. With the frosting, it tasted best chilled.

4. Rosemary turkey breast. Eating turkey breasts like this doesn't feel quite right. I adapted this recipe by using turkey breasts, rather than a whole turkey (for obvious reasons). That said, they were seasoned well AND I seasoned them with rosemary cut from my very own rosemary plant. That made me proud.

instant alfredo pasta sides and some frozen veggies.

  1. Commenting late.....about the mango salsa...I use more lime and red bell as well. LOL The bacon wrapped chicken looks really good! And I love seeing your herb cutter thing....
